A Chef Offers Free Food from Leftovers

Not content with simply having the first-class restaurant in the world, Italian super-chef Massimo Bottura is on a mission to change how we think about food.   Bottura is to open two new restaurants in Paris and Naples. But wealthy diners will not be welcome. The food will be free, made from leftovers and served only to the poor.   One of Bottura’s restaurants in Milan already feeds the poor and the homeless. He never thought leftover foods were a waste. He says, “Bread crumbs, some overripe tomatoes, brown bananas ... they are just opportunities for us to show what we can do with our creativity.”   The restaurant use recipes created by Bottura and other famous cooks. “Cooking is about love, about using our knowledge of ingredients to fight against waste,” says Bottura.   Bottura started the project to reuse leftovers from Milan Expo in 2015, with the theme “Feeding the Planet, Energy for Life”.   Unlike traditional soup kitchens, the guests do not have to wait in a line to receive food. Everyone gets served at tables. Bottura says the experience can help his guests regain confidence and take back control of their lives.   “There are 60 million starving people in the world, 1.4 billion overweight people, and about one third of the food produced worldwide each year — 1.3 billion tons — is wasted or lost,” he says. “So of course, it’s possible to feed everyone on the planet.”   Bottura has founded Food for Soul, a non-profit organization that fights food waste. “We’re not changing people’s life, but we’re giving them happiness,” says Bottura.
