1. Select fresh firm pinkish or reddish lychees with no sign of green, and the fruit feels plump and heavy for its size. Avoid dry skin and mushy fruit.
2. Once harvested, the fruit does start to dry out quickly and the skin turns brown over time. Lychees with a few brown patches are still good to eat. You can put the good lychees in the plastic bag and store in the fridge for up to a week.
3. Only the flesh is edible. The great lychees taste delicious at room temperature and also when chilled. The flesh has that unique lychee scent. It is sweet and very juicy and it has the white firm and soft texture. I like it a lot.
