I LOVE steak - but when I first got to China, it was pretty difficult for me to order steak, because the words you use to talk about steak are entirely different to English! But what about if you go overseas? You might have a similar probelm right? So today, I'm going to teach you how to order steak in English.  Now whenever you order steak, the waiter will ask you: "How would you like your steak?" 这不是你喜不喜欢牛排的意思,而是:你的牛排要怎么煮,要几成熟: How would you like your steak ▼ So in English, there are five main ways to cook steak: Rare: 一成熟 125°:僅是牛排的表面煎熟呈褐色,內裡的肉微暖,呈血紅色。雙面有過火,封住血水,一刀切下, 應該還會有點血水流出. Medium-rare: 三成熟 130-135°:牛排表面呈褐色,中間的肉溫暖並呈紅色。過火,然而肉的內部要帶點溫度,溫溫的喔不是熱的 Medium: 五成熟 140-145°:牛排外圍呈褐色,內裡的肉以粉紅色為主,中心部份仍見一絲絲血紅色。烤或煎至中心為溫熱,仍保留血水 Medium-well: 七成熟 150-155°:牛排內裡的肉大多是褐色也熟了,中心溫熱,外圍成稍暗紅色,中心部份則為粉紅色。 Well done: 全熟 160°: 牛排呈現完全熟了,並稍微烤焦。無血水,只有肉汁,肉呈淡褐色。 Of course, you can also have raw beef: Raw: 生:完全未經烹煮的生肉,這種做法只會用在某些菜式例如韃靼牛肉或生牛肉沙拉上 One very famous and expensive raw beef dish is Steak Tartare Steak Tartare: 鞑靼牛肉,又称他他牛肉、野人牛肉,是新鲜的牛肉、用刀剁碎而成的一道菜式。传统吃法通常加上盐、鲜磨的胡椒粉、塔巴斯科辣椒酱(Tabasco)、喼汁(Worcestershire Sauce);意大利式吃法又加上洋葱末、酸黄瓜(cornichons)、西洋香菜末(parsley)、大蒜末、橄榄油,最后打上一颗鲜生蛋黄 ▼ So what kind of steak do I like best? I would say medium So when the waiter asks me: "How would you like your steak?" I would say: "medium please" ▼ So now it's your turn - how do you like your steak?
