It's a soft, cheese-like food made by mixing a coagulent with soy milk, curdling it, then pressing it into shape. It has rather a bland taste on its own, but this is what makes it capable of absorbing other flavours very easily. Over the centuries, Chinese chefs have created and developed a rich array of tofu varieties with different appearances, textures and tastes, and as they have done so, the list of well-known tofu dishes has grown and grown. This wobbly soya product also has extraordinary health benefits, and nowadays is becoming popular the world over.
